ARTICHOKE AND KIDNEY BEAN PAELLA

Ingredients (serves 4)

 ·        1 tablespoon olive oil

·        1 medium onion -- chopped

·        3 cloves garlic -- finely chopped

·        1 cup brown rice -- uncooked

·        1 cup frozen peas

·        1/2 teaspoon turmeric

·        1/4 teaspoon salt -- or more to taste

·        16 ounces red kidney beans -- cooked

·        6 artichoke hearts -- quartered (1 can)

·        Tabasco sauce -- to taste  

 

Cook rice.

Heat oil in large skillet and cook onion and garlic until crisp/tender, about 4 minutes.

Stir in remaining ingredients, and heat 5-10 minutes, until peas are tender.
