TOMATO AND MOZZARELLA SALAD (CALLED 'CAPRESE' IN ITALY)

Serves 4

2beefteak tomatoes
185 g (6 oz) Mozzarella cheese, sliced
salt and pepper
extra-virgin olive oil
fresh basil leaves


Slice the tomatoes and arrange with slices of cheese on 4 plates. You should alternate a slice of tomatoes with one of mozzarella, then tomato, then mozzarella and so on.

Season with salt and pepper, then drizzle oil over the top. Scatter over the basil leaves.
