Ingredients (serves 6):

1kg (2lb) potatoes,
scrubbed

6 spring onions, finely
chopped

salt and pepper

3 tablespoons Mayonnaise

3 tablespoon natural
yogurt

snipped chives, to
garnish
Cook unpeeled potatoes in a
saucepan of boiling salted water for a bout 15 minutes until
tender.
Drain then cool a little
before removing skins. Cool completely. Dice potatoes and put into a
bowl with spring onions, then season with salt and pepper.
Mix mayonnaise and yogurt
together in a bowl, then fold into the salad. Spoon into serving
dish and serve garnished with chives.
