German Potato Salad

Ingredients (serves 6): 

  • 1kg (2lb) potatoes, scrubbed

  • 6 spring onions, finely chopped

  • salt and pepper

  • 3 tablespoons Mayonnaise

  • 3 tablespoon natural yogurt

  • snipped chives, to garnish

Cook unpeeled potatoes in a saucepan of boiling salted water for a bout 15 minutes until tender. 

Drain then cool a little before removing skins. Cool completely. Dice potatoes and put into a bowl with spring onions, then season with salt and pepper.

Mix mayonnaise and yogurt together in a bowl, then fold into the salad. Spoon into serving dish and serve garnished with chives.
