MARINATED ZUCCHINI
Ingredients
(serves 4 to 6)

3 medium zucchini, thinly sliced (about 1 1/2
pounds)

¼ cup chopped onion

¼ cup chopped green pepper

¼ cup chopped celery

1/3 cup cider vinegar

¼ cup sugar

¼ cup vegetable oil

1 tablespoon white wine vinegar

½ teaspoon salt

¼ teaspoon freshly ground pepper

Pinch of
chilli pepper
In glass
bowl, combine first 4 ingredients; toss lightly.
Combine
cider vinegar and all following ingredients; mix well and pour over
zucchini mixture. Cover and chill 8 hours, stirring occasionally.
