Persian Carrot Salad

Ingredients (serves 6 as a side dish): 

  • 500g (1lb) carrots, grated

  • 2 large oranges

  • 90g (3oz) raisins

  • 60g (2 oz) blanched almonds, lightly toasted

  • lime slices, to garnish 

Spicy dressing:

  • 2 tablespoons virgin olive oil

  • 2 tablespoons lime juice

  • 1 teaspoon ground cumin

  • ½ teaspoon ground cinnamon

  • ½ teaspoon caster sugar  

Put carrots into a bowl. Cut peel and pith from oranges. Remove segments and chop. Add to carrots with raisins and almonds.  

To make the dressing, mix all the ingredients together in a bowl. Toss together, then refrigerate for 1 hour. Serve garnished with lime slices.
