Ingredients (serves 6 as a
side dish):

500g (1lb) carrots,
grated

2 large oranges

90g (3oz) raisins

60g (2 oz) blanched
almonds, lightly toasted

lime slices, to garnish
Spicy dressing:
Put carrots into a bowl. Cut
peel and pith from oranges. Remove segments and chop. Add to carrots
with raisins and almonds.
To make the dressing, mix
all the ingredients together in a bowl. Toss together, then
refrigerate for 1 hour. Serve garnished with lime slices.
