Ingredients (serves 2) 

  • 1/2 teaspoon Ginger root -- finely chopped

  • 1 medium Onion -- sliced

  • 2 medium Carrots -- sliced on diagonal

  • 1 medium Green bell pepper -- cored and Sliced

  • 2 small Zuchinni (one green -- one Yellow) Sliced on diagonal -- thicker Than the carrots

  • 1 cup Bean sprouts

  • 6-8 mushroom – sliced not too thinly

  • Soy sauce 

 

Heat wok over med-high heat, toss in the vegetables that take longer to cook e.g. carrots, then peppers, then zucchini and onion etc. Once all the vegetables are in, add soy sauce.


Stir fry constantly until vegetables have only slightly softened. Do not overcook.

Serve with rice or noodles and add soy sauce according to taste.
